A versatile base recipe that converts into endless possibles for variety all week long.
  • 4 chicken leg quarters, bone in
  • ½ tsp ground chipotle chili pepper (or paprika)
  • ½ tsp ground cumin
  • 1 tsp oregano
  • 1 tbsp rosemary
  • 1 tbsp minced garlic
  • ½ tsp liquid smoke
  • 1 tsp salt
  • ½ tsp pepper
  • 2 red bell peppers
  • 2 green bell peppers
  • 1 red onion
  • 1 lb corn
  • 1 can (15 oz) petite diced tomatoes
  • ¼ cup fresh cilantro
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp oregano
  • zest of one lime & its juice
  2. preheat oven to 350
  3. start dutch oven on stove top.
  4. heat stove on medium high
  5. coat leg quarters with seasoning
  6. place olive oil in bottom of dutch oven
  7. set leg quarters in the dutch oven
  8. sear meat for 4 minutes each side on the stove top
  9. cover with lid
  10. place in oven
  11. bake 60 minutes.
  13. In skillet heat onion and olive oil until onions turn translucent
  14. add remaining ingredients
  15. heat until warmed
