This is a perfect COMPLETE meal to prep over the weekend and toss on the grill or in the oven on a busy Monday! As a matter of fact, it’s so easy your kids could do it for you! You might need to cut up the sweet potatoes, but they can do the rest.

The easiest way is to buy an all natural pre-made BBQ sauce, but if your house is like mine and you have oodles of allergies.  Or if you are following Whole 30, then you need to make your own sauce.

The beginnings of this recipe for this sauce comes from Food For Penny. A blog after my own heart, easy peasy healthy. But I love garlic and smoky, I love to smell my BBQ from a mile away !  So I altered their recipe just a tad, but I still want to give credit where credit is due 🙂

This is something my kids have done and cooked over our bon fire too!  But just keep those packets raised up from the coals a bit and not on the big flames (unless you’re a Texan that loves your “burnt ends” )

Whole 30 BBQ Bundles

Ingredients
  • 4 sweet potatoes
  • 16 chicken tenders or 8 boneless chicken breasts cut in half length wise
  • 1 lb whole green beans
  • Smoked Chipotle BBQ Sauce
  • foil
  • SMOKED BBQ SAUCE INGREDIENTS:
  • 1 Can Tomato Paste (12 oz)
  • ½ Cup Balsamic Vinegar
  • 2 cups unsweetened apple sauce
  • 2 TBSP apple cider vinegar
  • 3 TBSP Olive Oil
  • 2 Tsp Chipotle Powder
  • 1 Tsp Liquid Smoke
  • 3 TBSP Minced Garlic
  • 2 Tsp Salt
  • ½ Tsp Pepper
Instructions
  1. Start by mixing together ALL BBQ sauce ingredients in a mixing bowl
  2. place the frozen chicken tenders into the sauce, stir to coat
  3. roll out and tear off 8 sections of foil
  4. make sure each piece of foil is at least 15" long because you will be bringing the ends together to create a little pouch
  5. spread out the 8 pieces of foil
  6. dice the sweet potatoes into cubes that are about 1"(slightly smaller than a ping pong ball)
  7. now for distribution!!!
  8. evenly distribute sweet potatoes first
  9. next layer is the green beans- evenly distribute the green beans on top of the potatoes
  10. last, place two chicken tenders on each
  11. distribute any extra sauce onto the piles
  12. now, bring the ends of the foil together at the top of the food pile
  13. fold the foil over like a good old fashioned lunch bag
  14. make sure your seams are all at the top so your sauce doesn't leak out when cooking
  15. Bake at 350 for 30 mins
  16. or cook on grill over medium flame for 30 mins
